1 Large Courgette

2 Medium Eggs 

1 Cup Grated Cheese

1 Cup Ground Almonds 

1/2 tsp Tumeric 

Salt & Pepper

METHOD

1. Grate the courgette and squeeze out all the excess liquid with a clean cloth or tea towel.  

2. Whisk the eggs together in a bowl and then mix in the courgette, grated cheese, ground almonds, tumeric and season with salt and pepper. Cover and place in the fridge for 15 minutes.

3. During this time, preheat the oven to 180 degrees celsius. Line an oven tray with baking paper. 

4. After 15 minutes, remove the mix from the fridge and spread evenly across the baking try. 

5. Bake for around 20-25 minutes until golden. Slice into 1 inch wide fingers and serve alongside your favourite dip!
