INGREDIENTS

Provides 6 Portions 

170g Spelt Flour

6g of dry yeast

100ml of warm water

A pinch of sugar

1 Tsp of Salt

1 Tbsp of Coconut oil (or any oil!)

1 Beef tomato

1 Tbsp Oregano

200g of mozzarella

Feel free to add other vegetables - I recommend mushrooms or asparagus!

 

Method

1. Add 50ml of your warm water to a bowl with the yeast and sugar, mix and cover for 5 minutes. 

2. After 5 minutes, add the rest of the warm water along with the oil and the salt. 

3. Cover the dough and store in a warm place for 60 minutes for the dough to rise. 

4. While you're waiting for the dough to rise, you can slice the mozzarella, dice the tomatoes and chop the basil.

5. Preheat your oven to 200C°.

6. After 60 minutes, or once the dough has doubled in size, lay out some flour on a surface and turn out the flour to knead it. 

7. Keep adding flour so the dough doesn't stick to your hands, use a rolling pin to roll the dough out and shape it into a circle.

8. If you're using a tart tray, pop your dough in there - you can also just pop it on a baking tray lined with baking paper like a pizza! I use a 11 inch silicone tart mold. 

9. Once you have your dough in the mold (or on the tray), pop it in the oven for 10 minutes or until the dough is cooked in the middle.

10. After 10 minutes, add the cheese and any vegetables you like, then pop in the oven again for 10 minutes - until the cheese is melted.

11. Here we have our beautiful and healthy tomato tart! Best served with a bit of side salad, enjoy!
