Get creative with your toppings for this chickpea-based veggie burger. Will you serve it in a brioche bun or a morning roll? Salad or no salad? And then which cheese do you melt on top - a fine cheddar, a stringy mozarella, or maybe a strong stilton? Make sure you have all your favourite trimmings for this one!

INGREDIENTS
Makes 4 Burgers
1 x 400g Tin of Chickpeas
1 Small Onion
1 Clove of Garlic
1 Medium Carrot, grated
1 Egg
3/4 Cup of Oats, blended
1/2 Tsp Cumin
Pinch of Parsley
Salt & Pepper
4 Burger Buns
Various Toppings
Tip - To easily remove the outer skins, immerse the chickpeas in cold water and gentle massage them. The skins should float to the top. Repeat until all the skins are removed!
METHOD
1. Drain and rinse the tin of chickpeas. If you’d like a smoother burger mix, remove the outer skins of the chickpeas.
2. Once you’ve removed the skins, mash the chickpeas until you have a smooth mix.
3. Finely chop the onion and garlic and mix into the mashed chickpeas. Add the grated carrot, egg, blended oat mixture, cumin and parsley. Season generously with salt and pepper and mix all the ingredients together thoroughly.
4. Cover and leave in the fridge for 30 minutes.
5. With dampened hands, form 4 burger patties.
6. Heat some oil in a large skillet and cook the patties over a medium heat until golden. Serve in a bun with your favourite toppings.
